Chinese Chicken Noodle Soup

Fragrant Asian chicken soup with noodles, ginger and coriander – ready in under 45 minutes.

Ingredients

  • 2 l chicken broth
  • 700 g chicken breast
  • 2 pieces ginger (approx. 2 cm each)
  • 6 spring onions
  • 4 tbsp soy sauce
  • 300 g Chinese noodles
  • 1 bunch coriander
  • 2 tbsp mirin

Instructions

  1. Chop the chicken breast into small pieces. Boil in a pot of water for about 20 minutes, then drain.
  2. Peel and roughly chop garlic. Peel ginger. Slice spring onions into rings.
  3. Bring chicken broth to a boil with garlic and ginger. Add spring onions, mirin, soy sauce, chicken and noodles. Reduce heat and cook for 5 minutes.
  4. Remove ginger and garlic from the soup. Finely chop coriander and scatter over the soup.
