Chinese Chicken Noodle Soup
Fragrant Asian chicken soup with noodles, ginger and coriander – ready in under 45 minutes.

Ingredients
- 2 l chicken broth
- 700 g chicken breast
- 2 pieces ginger (approx. 2 cm each)
- 6 spring onions
- 4 tbsp soy sauce
- 300 g Chinese noodles
- 1 bunch coriander
- 2 tbsp mirin
Instructions
- Chop the chicken breast into small pieces. Boil in a pot of water for about 20 minutes, then drain.
- Peel and roughly chop garlic. Peel ginger. Slice spring onions into rings.
- Bring chicken broth to a boil with garlic and ginger. Add spring onions, mirin, soy sauce, chicken and noodles. Reduce heat and cook for 5 minutes.
- Remove ginger and garlic from the soup. Finely chop coriander and scatter over the soup.
